Chocolate, salted caramel Bailey's & vanilla vodka cocktail with powdered pretzel rim
CHOCOLATE, SALTED CARAMEL BAILEY'S & VANILLA VODKA COCKTAIL WITH A POWDERED PRETZEL RIM
Here is my 'Happy New Year' cocktail ... a grown up icy treat that is perfect for our hot Australian Summer.
This icy little drink is super easy to put together, and great for entertaining.
It's very rich, and could almost serve as a dessert cocktail ... but blended with lots of crushed ice, it's refreshing, fluffy and silky smooth.
The chocolate syrup makes a great base for hot chocolate also, and can keep for a while in the fridge, so can be made ahead of time and kept in a 'squeezy' bottle.

INGREDIENTS
Salted caramel Bailey's Irish Cream
Vanilla infused Vodka
Ice cubes
Salted pretzels
Crispy pearls - salted caramel, dark and milk chocolate covered wafer balls to serve (optional)
Chocolate Syrup (will make extra!)
1 cup cocoa powder
2 ½ cups caster sugar
3 cups water
METHOD
Chocolate Syrup
Bring water and sugar to boil, constantly stirring.
Boil for 3 minutes.
Whisk in cocoa powder, then strain through sieve. Cover and refrigerate.
Powdered Pretzels
Place pretzels in food processor and blend until powdery crumbs achieved.
TO ASSEMBLE THE COCKTAIL
Place some chocolate syrup in a saucer or shallow bowl.
Place powdered pretzels in saucer or shallow bowl.
Dip the rim of the cocktail glasses in the chocolate syrup, then in the powdered pretzels, when ready to serve.
In a drinks blender, add:
2 parts chocolate syrup
2 parts vanilla infused Vodka
4 parts Salted caramel Bailey’s
ice cubes to make as icy as you like!
for 4 cocktails in Martini glasses:
1/2 cup chocolate syrup
1/2 cup vanilla infused Vodka
1 cup Salted caramel Bailey's Irish Cream
approximately 1 1/2 cups ice cubes
and blend until the ice is completely crushed, and the drink is smooth and fluffy.
Pour into cocktail glasses, and scatter with some chocolate covered crispy pearls which will float on top, and add extra crunch to the cocktail.
